  4. Well there is - but maybe not what you think. Rye is a very low gluten grain - as such it is much easier to make a pan loaf, and make it really hearty with lots of grains and seeds. But with that being said, we make just about all our rye breads with natural leavening (or sourdough starter). Because the acidity that comes with the starter is great for working with the rye - it wants an acidic environment. It is really hard to get a artisan style rye loaf to have any sort of open crumb if the rye content is over 50% of the flour, it just falls under it's own weight from the lack of gluten structure. And the rest is about marketing and perception. In 'merica, rye bread means mostly white bread with a touch of rye and a shite load of caraway. In old world, rye is used in so many ways that it is staggering the variety and flavors that you can get. Hope that helps a little. ---------------------- On other bread fronts...   7. Hey Shelly, I would say for sure that the Ether C Flow is more open and neutral than the Aeon Closed, in fact it's the top closed headphone I've personally used in those regards. I'm a big fan of it overall. The Focal Stellia is possibly slightly more detailed, but has a less neutral signature, smaller soundfield, and much higher price.

I blasted through the Out of the Blue 30th anniversary CD thread yesterday – typical of discussions on the Hoffmann forums regarding classic albums with many reissues, the results were inconclusive. Steve Hoffmann started it with a recommendation and then offhandedly mentioned it wasn't one of his favorite albums and he was doing everyone a favor by listening to it. ... things went downhill from there. The upshot is that most people seemed to like it and then they started picking nits about audible dropouts in various tracks on the remasters (as well as on the original LPs) with no update on the succeeding 2008 reissue CD (without the bonus tracks of the 30th Ann.) along with side discussions of vinyl versions, Japanese and Austrian CDs, cassettes, etc. TL;DR: Some people may be overthinking this

  10. New Shape - new Method. Testing out Batards (oval) - and baking with steam (Using cast iron and lava rocks to create a lot of steam - like a sauna) Results are coming along... This is an Oat flour/Spelt Flour mix - at 72% hydration - steamed for first 20 minutes of bake (total 55 minutes) on baking stone. Second loaf Super crispy.... So that is all nice and such..... But even the great mikeymad baker makes mistakes as well (learning opportunities) During my first steam last week - I used a new grain and way too high of hydration (water in loaf). So it spread out fast, as soon as it hit the stone. -- ran off the sides and back of the stone as it 'baked' I baked them all the way ... And ended up with tasty alien spaceships!!
