  4. Scallops Provencal with steamed dressed seasoned green beans almondine. Glass of pinot grigio. Appetizer was a really good shrimp and pork spring roll from our local asian market. Yum!
  5. With SWMBO working triple time taking care of sophisticated heart devices and transplants during the local strike (Nurses! To the barricades! besides, what better time and place for time off than June in MN? ), it was time for Old Pa's Home Alone grilled pork chops and veg. Thick bone-in pork chops marinated in hoisin, lime juice and sherry with mixed veg and more sherry on the side. Did I mention the sherry? Spaniels scored and we ate only one PC.
  6. Just a light respite on the Spaniels' Spring Vacation. BLSL chicken breasts marinated warm and cold in Wishbone Red Wine Vinagarette and lemon juice and slow grilled over meium heat on my little gas Weber grill. A nice big fresh designer lettuce salad with carrots, cherry tomatoes, cucumbers, red onions, foccacia croutons, Romano cheese, fresh cracked black pepper and more of the vinegarette. Glass of cab. Yum. Window faces down to lake on a sun-speckled evening. Spaniels scored some lean chicken. They just inhaled it from between my fingers.
  7. Just a real simple dinner of turkey bacon BLTs with cold five bean salad and a glass of cab.

Deli Pizza Take #2: OP's cracker crisp rye crust with caraway seeds topped with 2oz light Kraft Thousand Island dressing mixed with four cloves minced garlic, then grilled polska kielbasa sausage/chopped white onion/sauerkraut seasoned with juniper berries/sliced mushrooms and topped with grated swiss cheese. Green onions added after twelve minutes of bake: Glass of cab.

  10. The deal is the rule for groove standards changes at the end of the year. The new groove rules are going to be as popular as Barry's new CAFE standards.

Last night, with the return of warmer temps, we continued our return to lighter fare with Chicken Broccoli Stir-Fry: Cubed and marinated a couple of very nice SLBL chicken breastes in EVOO/S&P/high-octane soy/minced garlic/lemon juice/vintage balsamic vinegar warm-and-cold for several hours. Wokked up a chopped quarter white onion in some smokin' hot sunflower oil (instant carmelization) before the room temp cubed chicken and marinade went in. At this point, things start to happen fast in a stir-fry. Two cups of small broccoli florets went in when the chicken was good and seared and then a couple ounces of plum sauce at the end to finish. Served over seasoned basmati rice with a glass of pinot grigio. SWMBO sez I can make this again.
  12. Tonight's Pizza was inspired by my pal Grokit over at HeadFi.org : He suggested simplifying my usual pie, using traditional ingredients and substituting basil leaves for the spinach. So we have my herbed whole wheat cracker crust (I've been adding a TBS of EVOO for flavor and dough elasticity) with EVOO/minced garlic/chopped white onion/chicken andouille sausage/fire roasted tomatoes/fresh cracked black pepper/aged provolone/agiano/parmesian/romano under basil leaves and mozarella. It was great! Glass of pinot grigio. Thanks, Grokit!.
  13. After this morning on the practice range hitting balls into a cold north wind, the oatmeal just wasn't enough. So I made up a eggbeaters/Braggs/lemon juice/half&half/bacon/sauteed mushrooms and garlic omlette sandwich filled with HOT homemade salsa and crumbled feta cheese on whole wheat toast. Hit the spot.
  14. OP's Loaded Baked Potato Pizza. Whole wheat cracker crumb crust herbed with dried shallots and chives. Two minute crust pre-bake and then brush with EVOO. Half a cup of light sour cream with eight minced garlic cloves, chopped half white onion, 3/4C sliced baby bella mushrooms, half a cup of crumbled bacon. Three half-baked skin-on russets cubed and seasoned with EVOO and fresh cracked black pepper and sea salt. Two cups of shredded Wisconsin sharp cheddar. One cup plus of green onions for the last ten minutes. SWMBO went back for thirds. Glass of cab. Very tasty.

  16. NON-TRADITIONAL PIZZA WARNING This pie started out as a SWMBO challenge. After the german sausage supper earlier this week, she put the leftovers away all helter-skelter. When I commented, she said "What, can't you make a pizza out of that?" Hmm. Behold OP's Deli Pizza: Cracker crust with rye flour and herbed with 1tsp caraway seeds. Pre bake for four minutes then 2OZ Kraft Lite Thousand Island dressing with six cloves of minced garlic, chopped poultry polska kielbasa sausage, crumbled bacon, carmelized onions, baby bella mushrooms, cup and a half of sweet sauerkraut, 2 cups fine grated swiss cheese. Cup of chopped green onions for the last five minutes. Very tasty. Glass of pinot grigio.

  19. Thank you for your kind words and thoughts. My uncle Larry went in on Omaha Beach the first day and received multiple wounds. My father went back after his DDS to obtain his M.S. and Ph.D. and took several days a week to teach at the University of Illinois dental school for over twenty-five years while other dentists were just raking in the bucks. Both had and raised famlies who loved them very much. Both had been sick way too long with dementia and Alzheimer's. Still, we are diminished.
  20. You are too kind. Comfort food for a weekend when my Dad's older brother died early Saturday morning and Dad died this morning at 0700hrs.
