January 17, 201610 yr I want to get a Thermapen. Which one should I get? Also, will this work to measure of the surface of the pan? If not, what works best for that? Infrared thermometer? What kind? January 17, 201610 yr I've never worried about the temperature of the surface fo the pan. As to which thermapen, the cheaper one is good enough unless you can't wait a couple seconds
