It works because people who eat uni like weird fish, and people who put quail egg on their tobiko aren't gonna be necessarily wanting things that are on the menu

newbie What I've found is the best way to get great fish is to sit down, order uni and tobiko w/ quail egg, and THEN ask the chef to surprise you.

Funny, I always liked sushi when I was on the road travelling alone because I could sit and talk to the sushi chef. Ended up with a nasty sushi habit as a result of that. I still can't walk out of a sushi bar for less than $75, because I have a taste for the fish that doesn't come in the "sushi combo".

As to being audiophiles, I thought we were friends talking about gear, music, and random crap. If you're looking for labels, I'm sure you can find a better place for that. If you'd like to judge the gear people have, that's fine, you're welcome to your opinion. Enjoy amateur night at the bar, perhaps you can find a better fit for your personality there.
