Tried to channel colin and went a little fancy. Duck fat fries and duck leg confit. Followed by a slice of coffee crisp cake. Probably the best meal I've had so far. Julie had the chocolate mousse.

I would have just stayed up and done something if it weren't for the fact that we are flying into JFK and then driving to Montreal which is a 6 hour drive. I'll most likely sleep on the plane but this is annoying. Spring started as well so all the undergrads on my community are out ruining their livers and vocal cords.

Traveling tomorrow to Montreal to see Julies mum. Have to be up at 4. Of course i can't fall asleep.

Maybe once I have a larger apartment or a roommate who doesn't take up the entire fucking kitchen. I had to fight her for the little counter space to put the pot with the anova in it. 3 more months. That's what Julie keeps telling me.

Sous vide skirt steak cooked at @145F mostly because I had ribs in there already for a 48 hour cook. Was done more than I like steak to be but in just 2 hours man was it absurdly tender. Can only imagine what a longer cook at a lower temperature would yield. Very tasty steak. Definitely a lot better than the skirt steaks I have prepared in the past. Actually enjoyed it more than a ribeye which I am starting to find too fatty. This was just perfect. Veggies are next on the list. It's nice that even if I over shoot the cook times, there's nothing too detrimental that happens so I am happy about that.

As someone who basically gave Doug all creative control with the requirement of the amp being quiet with jh16s, I was more than ecstatic to receive the custom amp Doug built for me. He does good work It sounds great but is also pretty to look at. Understated effortless elegance was how Julie described it. I'd agree with her. Can't go wrong with something from Doug

Just finished another ribeye similarly cooked at 129F but for 3 hours pan seared with butter and herbs over medium heat. Not as crispy of a crust as it would have been had I used much higher heat but man this was the best steak I've ever had. Just the right balance of flavor, doneness, warmth, chewiness and tenderness. I'd say the 'Chacho' at the Columbia restaurant has been dethroned as my favorite steak. No pictures of this one unfortunately. Need to give my kidneys a little break over the next few days as I've been ingesting large quantities of meat but will be back in a couple of weeks.

The anova app said 129F for medium rare so that's what I cooked it at. Meat thermometer confirmed it at 129.6F. Whether that's rare or medium rare, I don't know but it tasted quite good in my belly

Medium rare rib eye (129F for 1 hour and 45 minutes) with basmati rice. Dropped it in frozen and seared it before hand. Crust wasn't as crispy since it was floating around in the juices for a long time. Going to try the searzall with the next one. The crust was just the right thickness though. I always end up overcooking the meat when I pan sear after sous vide even with the suggested 1 minute on each side.

I was the only one who actually took notes. Half the things said didn't add up. Directions people came from, the way the car was parked etc. We ended up disregarding the testimony of two witnesses because it was the exact opposite of the pictures taken at the crime scene showed. Most of them had already decided the guy was guilty when the girl came to the stand and showed the scar around her neck. I didn't have a problem with that but I did have a problem with assigning first degree attempted murder to it as there wasn't proof supporting that. I stuck to second degree and on the third day after going through my notes, a few other people agreed with me instead of just acting on emotion and saying oh the guy did a horrible thing. Throw the book at him whether there is any evidence for it or not. 12 angry men was a fantastic movie.

I actually got upset - one of the jurors was sleeping in the court room while people were testifying. Judge ended up seeing her and kicked her out. Basically deciding that guys life there and she falls asleep. Makes me very leery to go to trial if people like that are deciding my fate.

My one and only time so far was on an attempted first degree murder case. Having members of the felons family yell and threaten the jury wasn't all that pleasant. Learned a lot. Not sure I'd want to go through such a case again. It was very draining.

I'll be heading up to Montreal on March 18th and back on the 26th. Driving up from JFK so the 18th and the 26th are out. I have been granted leave for one perhaps 2 days to galavant around with my camera while the girls are hanging out with grandma and was wondering if there were any lesser known/somewhat easy spots for hiking/landscape photography within a reasonable distance (3 hours driving) of Montreal. I don't exactly know where we will be in relation to the city but it will be somewhere close by. My right leg isn't the most reliable but I can still hike - just don't trust it to hold up on very rough terrain. Don't need a paved path but something that won't completely destroy my knee on the way back. Any suggestions?

Brent would be more into it if he didn't get his ass kicked on weekday challenges in fitbit every week he might actually have a chance this week since I have finals. I love my fitbit flex. Great battery life. Tracks steps. Don't need it to do anything else.
