Yup all true and entirely understood before purchasing the temperature controller (I already owned the pot). That said, as of right now I am doing 2 steaks which fit easily and I used a thermometer to check the consistency and it seemed reasonably good (+/- 1 degrees) everywhere I looked. If I really like the outcome I will likely just invest in an Anova or similar rather than add a circulation pump. It's an experiment and I am having fun with it.

I am guessing it will be open with liberal leave. Going to be a goat rodeo for a bit. That said I'm likely going to be at home with the kids because their school is closed.

I've been dug out since yesterday and have made two trips to the grocery. It should be interesting to see how the DMV commute goes tomorrow assuming the federal government is going to do a delayed start.

Bought a Inkbird temperature controller for an experiment in slow cooker sous vide. I am hopeful.

I did about 4 hours of shoveling today. If course after I finished the real blizzard whiteout conditions started. Going to be buying a bunch of better quality shovels.

Just started first round of shoveling and one shovel broke and the other is failing. Nowhere has them in stock either. FML.

It's coming down hard here and more importantly it's not that windy so I am hoping that our power will stay on. I am kicking myself that I didn't get a portable generator hookup done when we were getting work done in the spring. Stupid...
