You really do. Steak is the best thing I have cooked this way so far, but I am super excited to try some other stuff that just was not possible the way I had been doing sous vide. Can anyone say 72 hour ribs?

The later Lambdas (I can speak for my LNS and 404) don't have the plastic bits in the headpad. A reasonably thick piece of leather would work fine and provide sufficient stuffness, just reuse the plastic tabs that connect it to the arc assembly.

I am in for 2 sets of KGSSHV board, one onboard and one external heatsink and 2 sets balanced Dynahi. Will update spreadsheet when I get home, work internet doesn't like the link.

I saw Devin Townsend play at my very first metal concert as the first act back in like, '05. Man, that was an epic concert, Dark Tranquillity and Opeth co-headlined to follow up. Dunno why I have not listened to Devin Townsend really since then, it seemed decent. The other two are, of course, some of my very favorite bands of all time. Dusty, you see Katatonia is touring with Opeth for the 'Heritage' North American Tour?

Damn Fitz, that sucks. Today, just work and went for a run, standard eating food, nothing exciting. Yesterday, had a date, met her at Rainbow City, which is some weird artsy balloon park/moon bounce thing sponsored by AOL in celebration of the opening of the new section of the Highline Park. Wandered around that for a little bit, then went to check out the new section of the highline. From the park, we saw a street fair going on, so of course, we checked it out. I won a t-shirt.
