  2. Sorry for resurrecting this almost dead thread, but I thought it'd be better than starting a new one on the same subject. We've been using the Anova with Ziplock bags with good results, no trouble with liquids, most of our sous vide cooking is with dry fresh food. We're considering cutting a whole jamón with the knife, as it should be, but instead of go cutting as long as we're consuming it, we'd cut it all at once and pack the slices in proper vacuumed bags. It should be more convenient, it's a big 7Kg jamón and we'd need a few months to consume it, so by the end it'd be too dry and chewy. We had one professionally cut and vacuum packed once, but they didn't cut it by hand with the knife, nor the vacuum of the bags was first rate. Disappointment at 25€ for an excellent quality pata negra. So, what'd be your recommendation for an affordable, no need of chamber, yet good vacuum quality sealer? We're not spending more in the vacuum sealer than on the jamón

  4. How can you be sure that its character is due to the source and not your liking or the amplifier or speakers, even the room? We're speaking of performance levels that being truly objective and fully aware of what's going on is very difficult, especially if assessing "true neutrality". I'm just playing devil's advocate, I'm not a big fan of Benchmark either, but pay attention to its bass output, it's as good as it gets.
  5. I think it's just two SE TRS stereo outputs for "normal" headphones, although I ignore if there's some way to configure them to become an additional way to output balanced signal on two TRS jacks, one per channel.

  9. IMHO the Genelec, while at a great price point, are a bit hotter (in the treble) than real so they may enhance brightness on some sources and recordings. ATC speakers have that bias too, but as stated before, it's just my humble opinion. I'm half deaf now
  10. A friend of mine lent me for about one month their DAC-1. At first it sounded warm and likeable, but on the long run (after one week or two) it sounded too soft to be fun and enjoyable to me. No idea how the preamp performs, but if you're thinking of using the DAC, maybe you'd enjoy better something else.
  11. Have you considered studio self-amplified monitors like Dynaudio BM12A or 15A? They're in the same range of studio performance you may be looking for, but more affordable than ATC or PMC. For ultimate performance check Lipinski and KK Audio too. If you must have separate amplifier and passive loudspeakers, they have good products too, but it'll be more expensive. Krell and Pass is highly recommendable stuff but more expensive than Bryston Depending on the power you need, there're plenty of brands making decent stuff at sensible prices. For sources Mytek is OK, I like my DSD. Lavry and Benchmark are worth considering too.

  17. I like that Bulova, one of the all black designs I'd wear, but at 45mm is too large for my wrist. However the steel metallic model on the video looks even better to me.
