January 19, 20251 yr I had a lot of veggies hangin' round, so I bought some chicken thighs. Browned the thighs in olive oil, set them aside to cool for shredding, added butter to the oil and fond, then plopped in my diced onion and carrots. Sweated those, added chicken stock, red bell pepper, green beans, zucchini, cauliflower and little red potatoes. Let those simmer for a bit, then added a pound of little pasta shells. Cooked for 10 minutes. Now I'll portion and freeze much of it for lunches.
January 19, 20251 yr Breakfast sandwiches. Sorry Brent. I used my new biscuit cutters to cut the biscuits, cut the cheese round and even to fry the eggs in.

February 15, 20251 yr A thinly sliced Skillet potato bake. I just have to wait for it to cool down for a bit before diving in.
March 4, 20251 yr Marinara, mozzarella, sweet Italian sausage, fennel and onion with a sprinkle of parmesan.
March 13, 20251 yr A couple of dinners this week. First, roast chicken and new potatoes on a bed of little gems lettuce. And a pork cutlet rice bowl. I fried the cutlets normally with a light amount of oil then briefly fried them again in chili crisp.
March 29, 20251 yr It's no secret that I'm not a big fan of Texas. It's political opinions or their antiquated ideas of what a man or woman should be. Austin being an exception. However, I am grateful for my Texan parents. Meals at my house were quite different from my friends. My Mom could cook! And my Dad could grill! Even simple, cheap meals are still some of my favorites, like pinto beans and cornbread. Another staple at my house was my Mom's chili. It's the best I've tasted, and tonight I'll be taken back in time. Gotta let it meld in the fridge for several hours. Then I'll make a pan of cornbread and be transported. April 5, 20251 yr Sunday sauce style ghoul ash -- ground turkey and pork loin cubes for meat; mushrooms, beans, okra, carrots, onions for veggies, pizza sauce and rocoto pepper paste and spices to bring it all together. Meat, spices, oil, and eventually onions were seared in the bottom of a pot, then all of it was transferred to the slow cooker while I day drank. and...ah, shit, I forgot the celery...dagnabit...
April 12, 20251 yr I put together a Nachos bar for the Saturday crew at work. To say it was successful would be understated for certain. It was decimated quickly. It was also a lot of fun.
