  2. Don't the Shuns offer resharpening at a nominal price? X2 what Reks said, he is the man when it comes to obsessive knife knowledge. In my opinion it would be better to start good then scale up to "obsessive" when you feeel the need, Jacob has given me lots of good information on where to find the better quality cutlery. The Shun chef and paring knives you posted would be ideal first starts. If you want good and purty then you might look at a bit pricey but hey, it's a gift for you and you deserve it. Oh, and you should get one of these just in case Laguiole Wine Opener Draughtboard Ebony/Ivory Sorry, OT.

    Shelly, Chicago Cutlery knives have a very soft blade which makes them easy to sharpen. I can put a hair shaving edge on them in less than fifteen minutes with a little practice so could you. The CC edge only lasts a couple of weeks but putting a new edge on them is pretty easy. Having said that, I rarely use the CCs myself they are for guests. Most of our guests use nothing sharper than an off the shelf Henckels and I am afraid they would cut off a digit trying to use my Japanese gyuto or even the Shun. Reks, don't you use serrated knives for cutting rolls or bagels?

Both sections are for one snake, I tore the skin while picking it out of the weeds. There were actually two skins, this one as you can see is at least four feet long, the other is a smaller two and a half feet in length. Gonna be an interesting summer.
