June 14, 201610 yr So I know that I've posted these quite a few times recently, but we keep tweaking and I think we hit on a true winner tonight. Red peppers worked better for us. I started them empty, open side down on the Weber. Once they started to soften a bit we flipped them and filled them with the egg mixture. That consisted of 4 eggs beaten, diced Roma tomato, diced pickled jalapeno's and shredded sharp cheddar. The final result was delicious. Spicy, sweet, mildly acidic, and the eggs were soufle-like.
