Greg, they are country style pork ribs without the bone. Very easy to make and if you chop them up they make a great pork sandwich. Much easier than smoking a pork shoulder. Apparently they started off in Brazil and then expanded overseas, so I imagine it's very authentic. But I have a tendency to prefer "Americanized" indigenous dishes more than "authentic" (Chinese, Indian, Mexican).
