  1. This morning required French toast.
  2. Finally got to break out the smoker for the first time since I bought it a couple months ago. @cetoole found pork shoulder for 99 cents/lb, so I got an 8-and-change pounder and broke it in. I had a cayenne and garlic infused garlic honey that I've liked before spread over it and rubbed in, along with some brown sugar. Let it rest overnight uncovered in the fridge, ground some salt over it today while the smoker was going through its initial burn in/up process. Have a learning curve (smaller-than-13-hour-hopper, so I ran out once), but... it doesn't suck.
  3. Looks tasty! Myself, I decided to go out to eat this morning. Went to the local Barefoot Cafe for Black Cat Benedict (known as Blackstone Benedict most places). Eggs Benedict with bacon and sliced tomato. It was delicious, but looking across the street at the Hummingbird Cafe got me thinking, what about a Cajun Blackstone Benedict? English muffin, thick Applewood smoked bacon and hollandaise, but with a fried Green tomato? Hummingbird has a Cajun BLT with fried Green tomato that is amazing. I might have to see if Michelle will make it for me. I think it would be incredible.

  6. Applied Rubio monocoat on Milo's midi-scale equipment rack. That was my first time actually applying this finish, and I found it easy to control do to the viscosity. Loving both the Mahogany and White Oak with finish applied!

  13. I received a Megatron built by Søren Brix two days ago. Simply based on who had a Carbon available in stock at the time, I also bought Søren's Carbon. I understand that head-case isn't really the place for 'listening impressions'. And, my grasp of audio engineering leaves much to be, uh, grasped. So I'll only note this: I really, really like the Carbon, to the point that I'm now looking for a 007mki specifically to pair with the Carbon. Before receiving the Megatron, I was pretty down on my x9000s, and I was buying into the negative reviews. The Carbon does not fit the x9000s, in my opinion. I am no longer down about the x9000s, not one bit, because Megatron. I don't dispute any of the negative opinions of x9000s--I don't have enough experience to agree or disagree--but I do believe I found the right amp to pair with x9000. Perhaps most relevant for head-case is my 'listening impressions' of Soren. Soren has been, in a word, delightful. I'm not an easy person to deal with--Soren was patient, thoughtful, fair, and he gave low-bias recommendations (when begged). Soren prefers to use stock, non-boutique components. I have no idea whether that professional stance does or doesn't make a difference. I do know that Soren has a clear philosophy of work, and I grew to admire his reasons. Thank you Kevin Gilmore for your design, and thank you Soren for bringing it into fruition.
  14. I wouldn't worry too much about extraction times that are under a minute. The main reason for the 30 second rule is for speed making drinks for a cafe. Worry more about how it tastes.

  18. This thread has been entirely too dormant. Got invited over to a friends for BBQ, couldn't go for various reasons. Decided to solve the problem myself. Unpictured, rack of ribs, pictured, 4lb pork butt. Cooked it to 180 internal before wrapping to try to get more bark/flavor and decided to try beer instead of apple juice this time in the wrap because, well, I was drinking.

  23. Not actually cooking, but making tuna salad. I like my tuna salad loaded. Red Bell Pepper, Onion, Heirloom Tomatoes, Pickles, but not just any pickles will do, Kalamata Olives, Crumbled Bacon, Albacore Tuna and Ciabatta Buns. When I'm ready to serve I slice some Avocado, then add some French Fried Onions. Yes, I'll be cleaning my countertops!
