Doing dinner prep - prepping a traditional style Filipino adobo with chicken thighs. Currently marinating in soy, white vinegar, garlic and bay leaf. While the thighs are cooking, I’ll reduce that marinade down to a glaze, and serve over rice.

I already finished the first batch of pickles and bought more.  This time I bought the hot and the Italian dill.  So good!  Looked at ingredients and the list is fairly short, many items I already have.  How easy are pickles to make?  I want to make my own variety, especially with my favorite rocoto peppers, or at least red hot cherry peppers and Thai or Korean peppers.  Cleanliness is the key ingredient, right?

Pickles are very easy to make.

I just bought the hot ones by accident, and I'll be making that mistake again. Delicious.

I made myself a Rosamunde-style mergez sausage. So sad they pulled out of the little shop next door to Toronado. The newer Rosamunde brew pub and restaurant is good but doesn't have the same feel.

2. Pancetta, trumpet mushrooms, olives and cheddar 
3. Alden's pesto mozzarella 
4. Pancetta, fig and goat cheese with a little olive oil on the dough.
