Food and Drink

From Whisky to Water and Soup to Nuts

  1. Started by JBLoudG20,

This forum sure helped me zone in on some key beers which I may not have had exposure to. I'd like to explore wine in the same fashion, and could use some pointers. I tend to like Red more than White, but will gladly explore anything suggested. I'd prefer my exploratory bottles be on the cheaper side, so suggestions under $25 would be appreciated. I'm looking for a great bang for buck

Friends and Mentors, I recently moved overseas to Moldova, a country where 70% of the population is economically dependent in some way on the wine industry. The wines themselves are not very well known internationally, but their primacy in their own country means that wine is consumed at virtually every meal and imported wine is essentially nonexistent. Domestic wine is both a huge business and a central part of culture here. One perk of my housing here is a 1000-bottle subterranean wine cellar, which currently sits empty. I am not well-versed in wine, but considering all the above and an average price of $6 a bottle on the local economy now seems like the p…

  5. Started by Icarium,

Making a batch for some friends tonight so thought I might document it here. I made a batch for one of the MoAs where it was well received. Depending on your ice/water adding strategy it makes ~5.5 quarts. Scale accordingly. The finished result is a deliciously complex florally sweet punch that isn't too cloying where I personally cannot pick out any of the individual ingredients they just integrate to something magical. It's based on this recipe: https://jeffreymorgenthaler.com/vacuum-seal-oleo-saccharum/ With a few ingredient substitutions I've adopted by way of my cocktail guru friend Dave who intro'd me to this. I've appended the substitutions to the r…

  8. Started by Augsburger,

Well these past few days have generated a few opportunities for some hard to get wines. I can get any amount of Sea Smoke, Ten, Botella and Southing if anyone is interested. I also received a letter notifying me of my allocation for Screaming Eagle so if any of you are insane enough for a outrageously priced California cult bragging rights Cabernet I can share some of my three bottle allocation with you. I am also getting ready to order some Glenrothes 1985 from a store Al turned me on to. The Glenrothes is $105 total. Let me know. This post can be rescinded once I sober up from the awesome dinner and wine tasting I just experienced.

I want to get a Thermapen. Which one should I get? Also, will this work to measure of the surface of the pan? If not, what works best for that? Infrared thermometer? What kind? [I need to start cooking again or else I am going to turn into a blimp.]

So I need to enlist the help of some of the LA folks in making a couple of recommendations for good, reasonably priced restaurants in the LA area. My sister lives out there and every year for Xmas I try to get her a gift certificate to a place she might not otherwise know about or feel like she can afford. Any recommendations would be greatly appreciated.

Well, after reading posts from Tyrion, Grawk, and others I decided to dip my feet into some bourbon. I tried some Maker's Mark, Gentlemen Jack and Jack Daniels Single Barrel. I didn't like the Gentlemen's Jack or JD Single Barrel, but I thought Maker's Mark was okay. I then decided to purchase these today: Knob Creek Woodford Reserve Basil Hayden Baker's 7 Just got done trying the Knob Creek and now I am on the Basil Hayden. What really intrigued me to Bourbon was Tyrion mentioning that he started off with scotches, but now reaches for bourbons. Since joining HC I've purchased a crap load of Scotches which I do very much enjoy. I prefe…

The glass beaker of my current Bodum french press is cracked and leaking. This is the second consecutive beaker that's failed in under a year. Can anybody recommend a small capacity (4 cup or 20 oz. range) french press that will last longer than a year? I would think that having a metal beaker or something similar would be good. Meanwhile, I'll start searching the web.

I posted about purchasing a new carbon steel pan recently. I thought that member's choice of cookware might be a interesting thread. For my self I have and use a set of non-stick cookware that I like. However most people missuse non-stick cookware. It's not made for high temp cooking, and will offgas at higher temperatures. That's not good for your health or for the pans non-stick characteristics. I also have a stainless set of Cookware that I love. That cookware, as many others require a a certain method of cooking. Pre-heating is a must, but it's quite easy to learn and quite good once you do. Mine is a 5 ply clad set with a copper core as well as aluminum co…

It was end of exams, and I got absolutely pissfaced... vomiting, unconciousness, headache, nausea, etc... I feel absolutely horrible right now... My throat hurts a lot from vomiting... Then again, I didn't have that much: pitcher of vodka and lemonade, gin and tonic, then a vodka and redbull... If it wasn't for a few good friends looking after me... I'd probably be dead by now I was so damn drunk that I managed to give the taxi driver 50 quid for a journey which costs 5.... My parents are going to kill me when they find out I puked all over my mattress, which costs a freakin' 900 quid, plus ruining a down pillow/duvet or two on the way.... I'm in deep shit... How d…
