I was at my mother's some time ago, and remembered that my stepfather (long since passed away) had some old liquor bottles in an armoir in her basement. I found several botttles of scotch and one cognac there. Was wondering if anyone had any thoughts on them. Worth bringing to a H-C meet? Literally, the only one I had ever heard of was Pinch....and the Ambassador is labelled the "lightest scotch in the world." The others are VAGUELY familiar, but most likely because I had seen them previously in the armoir. Please take a look, and any thoughts/opinions appreciated. Going to do some innernet searches as well...... Thanks! Todd.

Man, I am a roasting FOOL right now! I can't stop! Today I got my new roaster: It's a Behmor 1600. This thing rocks! It'll do up to a full #, and so far I have yet to see a single wisp of smoke! Of course I've only done 1/4 # batches so far, but still... It has 5 roast profiles built-in. So far I've only tried 2. It'll take me a while to try all five. I can't wait until tomorrow morning to get my first taste!

Looking to get a single portable induction cooktop since I am tired of cooking on the crappy electric stove in my apartment. I have several cast iron pans that I use so there should be no problem switch. Anyone have any suggestions? Do a quick look, there seems to be the HC version (at $1,800) but maybe I don't need quite that much precision. So I'm in the market for a decent cheapish pot type thing. I only want to buy 1 all-purpose item, so I'm thinking a stainless pasta set should be cool for pasta and soups. I braise a fair bit as well, and that's got me considering enameled Dutch ovens. However, I still need something for pasta, and intuition tells me Dutch ovens wouldn't be perfect for pasta. Sooo would I rather use a stainless stock pot to braise or a cast iron oven to boil pasta? No idea... Actually, I don't even know if enameled is considered better than bare cast iron; seasoning sounds like a pan in the bum, though. I'm a lazy cook for sure =D. I posted about purchasing a new carbon steel pan recently. I thought that member's choice of cookware might be a interesting thread. For my self I have and use a set of non-stick cookware that I like. However most people missuse non-stick cookware. It's not made for high temp cooking, and will offgas at higher temperatures. That's not good for your health or for the pans non-stick characteristics. I also have a stainless set of Cookware that I love. That cookware, as many others require a certain method of cooking. Pre-heating is a must, but it's quite easy to learn and quite good once you do. Mine is a 5 ply clad set with a copper core as well as aluminum core…

This Friday (9/25) I'll be attending an evening session of the Great American Beer Festival here in Denver. Much as I would like to sample all 1,800 beers, time is limited to 4.5 hours, and I can't drink one sample per 9 seconds for more than an hour or two. Therefore, I was hoping some of you brew aficionados (read: feckless drunks) might have some suggestions for me for a beer/brewery/style I should not miss.

From the Piddle Brewery, Dorset, that is. Recently when driving through the picturesque and amusingly named village of Piddletrenthide I saw a van similar to this. Subsequent investigation revealed the existence of the Dorset Piddle Brewery and their amusingly named collection of Beers. They certainly know how to work a theme. You can even get They even have merchandise They have even made it into a sorbet So, do you fancy a Piddle, then?

My buddy turns 50 on Saturday and he really likes Irish whiskey. He usually drinks Jameson and doesn't spend exorbitant amounts per bottle. I'd like to get him something really special that's going to make an impression and that he's going to remember. I know Jameson makes some higher end bottles like 12/18 Limited Reserve and Rarest Reserve, but honestly, I just don't know. Do any of the Irish whiskey aficionados here have any experience or suggestions for me in the $200-$300 range, even if it's not Jameson.

Thought this may be fun and useful: I'll start with my Sazerac Recipe: 1 tsp Cane Sugar (I prefer Turbinado) 2 drops Peychaud bitters 1 tsp Water 2 drops Angostura Bitters 1 cup Cracked Ice 2 oz Rye (or Bourbon in a pinch) 1 tsp Herbsaint or Absinthe (I prefer Herbsaint) Lemon Twist In a shaker, muddle the sugar, water and Peychaud bitters. Add Angostura bitters, ice and rye (bourbon). Shake gently until well chilled. Pour Herbsaint or Absinthe into an old fashioned glass. Swirl to coat glass insides and bottom and pour out excess. This forum sure helped me zone in on some key beers which I may not have had exposure to. I'd like to explore wine in the same fashion, and could use some pointers.
