  1. I made complicated lunch today. Chopped up leftover smoked short ribs, pan friend briefly to warm/soften, added one egg, topped with very sharp cheddar and served on a grilled bagel. It was excellent.

  5. I don't fortunately suffer from coulrophobia, the morbid fear of clowns - I just find the shower really really creepy. I only once saw someone with a real phobia - gephyrophobia - a surprisingly common morbid fear of bridges, We were doing an organised 20 mile walk for charity a few years ago, and caught up with two ladies, friends, at the start of a long footbridge crossing a four lane road. One of them was in an awful state. Pale, dilated pupils, sweating, breathing rapidly and pacing around. Quite prepared to turn around and walk 10 miles back to the start. We eventually got her across, with us and her friend in front and behind, shouting "la, la, la ..." and leading her by the hand. When we got her to the other end, she turned into a regular person almost instantly - and with a real sense of triumph at actually getting over the bridge. So we might be uncomfortable with creepy clowns, spiders or snakes - but a true phobia is something else entirely.

  8. missed Dan's roaster update but am interested for sure. the mysore is one of the better bags i've ever done with aeropress. @HemiSam definitely a fan of Heart. the very first Ethiopian i had from them was one of the first brews i ever made on v60 and it was absolutely fantastic.

  11. I am lazy and like easy solutions, so pellets are the only way to go for me. I've been using the same Traeger I bought many MOAs ago but replaced the PID for a much better one after going to Naaman's in Austin. So much more control of the temp, especially for low and slow smokes.

  13. Best of luck, Dan. On the coffee note, I expect my consumption will normalize now that we're opening our offices back up on a staggered basis. I was going in every third week as I had a designation that allowed it. Good for mixing things up for me, but even those days I'd brew a nice latte before I left. I've gotten caffeine spoiled... HS

  15. New batch of coffees today. Sipping my first cup of one of the Ethiopians. Packaging is very nice as is their mission statement. They roast to my tastes...more to the medium side. I'll report back with more meaningful thoughts once I've gotten to spend some cups with them. HS

  21. If you're only going to smoke then a smoker or pellet grill are probably your best choices. I am a fan of pellet grills and use mine constantly, but use it for both grilling and smoking. My daughter's fiancé has a smoker and loves what ever he has. For your needs that may be the better option, and I know very little about a smoker. I have done briskets and ribs on the pellet smoker. I have had to refill the hopper when doing a brisket once after about 12 hours. So the deal with pellet smokers is they all work fine and all do the same thing. Things to look for once you determine the size is the PID (temperature controller) and hopper size. Once you dial in your temp you literally set it and forget it until done. If you get one then you have the fun of trying different pellets until you find what you like best and what works best in your smoker. Can also fine tune flavors like hickory, apple, jack daniels & etc. My gateway drug was a green mountain grill daniel boone. I liked the PID on it better than the Traeger at the time. Bargain basement purchase in the land of smokers but made many briskets on it. Then I went the opposite direction when I got one for the primary residence and got a Memphis. All stainless steel, top of the line PID. Not as nice as Stretch's but very nice indeed. The other top end model I looked at was MAC.
