November 11, 201312 yr comment_608902 Currently marinating chicken in a mixture of lime juice, salt, pepper, oregano, and olive oil and just finished roasting tomatillos for a fresh batch of salsa verde all in preparation for enchiladas tonight. The chicken will get grilled, shredded and then mixed with cheese for the filling and a portion of the salsa will get mixed with an egg and sour cream to form the topping. Easily one of my favorite meals to make and eat at home. Report
