I need to pick up some nice knives at some point. My inlaws bought us a set from Sharper Image which are not bad but I'm thinking I need something sharper and that holds the edge longer.

Mylimited experience Mike is that you might start searching for high carbon, forged knives. Those tend to have much harder and stronger edges that will last longer. The trade off being that they take it seems five times as long to put a sharp edge on them. I love my Japanes knives but you have to remember to dry them off right away after washing of they will stain.

It really depends on how well you take care of your knives. Carbon steels maintain sharpness longer but you need to sharpen them by stone and you need to wipe water off them constantly until a patina forms on it. Stainless steel knives can maintain sharpness for a few months if you don't debone anything or chop frozen stuff. Tojiro, Global G2, Misono are all good options.

My DAC has been in a perpetual state of wood for about 14 years now. That did come close to changing recently, when the Connery/Zardoz pic was posted though.
